3. Charred Corn Ribs with Extra Mature Cheddar & Chilli Honey Drizzle
Cheese: Great British Cheddar - Extra Mature
Sweet, smoky, and just the right amount of cheesy — this dish brings out the best in British cheddar.
Ingredients:
-
2 corn on the cob
-
1 tbsp olive oil
-
1/2 tsp smoked paprika
-
Salt & pepper, to taste
-
80g Great British Cheddar- Extra Mature, finely grated
-
2 tbsp honey
-
1/2 tsp red chilli flakes (adjust to taste)
-
Fresh coriander or chives (optional), to garnish
Method:
-
Prep the Corn Ribs
Cut each corn cob into quarters lengthways to make "ribs" (use a sharp knife and a steady hand). Toss in olive oil, smoked paprika, salt, and pepper. -
Grill Until Charred
Place the corn ribs on the BBQ over medium-high heat. Cook for 10–12 minutes, turning occasionally, until nicely charred and curled at the edges. -
Add the Cheese
While the corn is still hot, sprinkle over the Wookey Hole Cheddar so it melts slightly onto the warm kernels. -
Chilli Honey Drizzle
In a small bowl, mix the honey with chilli flakes. Drizzle over the cheesy corn just before serving. -
Garnish & Serve
Scatter with chopped herbs if using. Serve hot as a vibrant, cheesy BBQ side.
