
A Great British Easter: Traditions & Savoury Hot Cross Buns

Recipe: Cheddar Cheese Hot Cross Buns
This savoury take on the traditional hot cross bun is the perfect addition to an Easter brunch or afternoon tea. Our Extra Mature Cheddar brings a rich, tangy depth to the fluffy, spiced dough, creating a truly irresistible treat.
Ingredients:

500g strong white bread flour

10g salt

10g fast-action yeast

300ml warm milk

50g unsalted butter, melted

1 egg, beaten
-
100g Great British Trading Extra Mature Cheddar, grated

1 tsp English mustard powder
-
1 tsp dried thyme
-
1 tsp cracked black pepper

75g sultanas (optional, for a hint of sweetness)

50g plain flour (for the cross)

2 tbsp water

2 tbsp honey (for glazing)
Method:

In a large bowl, mix the flour, salt, yeast, mustard powder, thyme, and black pepper.

Add the warm milk, melted butter, and beaten egg, then mix to form a soft dough.

Knead for about 10 minutes until smooth and elastic.

Gradually knead in the grated cheddar and sultanas (if using), ensuring an even distribution.

Place the dough in a lightly oiled bowl, cover with a tea towel, and leave to rise for about 1 hour, or until doubled in size.

Knock back the dough and divide into 12 equal portions. Shape into buns and place on a lined baking tray.

Cover and leave to rise for another 45 minutes.

Preheat the oven to 200°C (180°C fan). Mix the plain flour with water to form a paste, then pipe crosses onto the buns.

Bake for 20–25 minutes until golden and cooked through.

Brush with warm honey for a glossy finish and leave to cool slightly before serving.
